The wine then rests on fine lees through the winter before an unfiltered bottling, with only a trace of sulphur added and the timing set to the waning moon. The result carries bright cherry and raspberry, a firm but fine structure, elegant spice and a persistent line of acidity. Close in spirit to a well-made Morgon. Philippe and Guillaume ferment through a long cool maceration of nearly a month, fully destemmed to keep tannin extraction in hand, then age the wine in neutral oak for ten to twelve months. What comes out is a Mâcon Rouge of rare complexity: white pepper, dark spice, kirsch and dried herbs, with smooth integrated tannins and a long savoury finish.
