In 2012 Sébastien Agelet began making wine quietly at Paziols, a small village in the foothills of the Pyrenees, working hidden from his neighbours with the guidance of a natural winemaker friend. That first secret cuvée is what gave this wine its name. Clandestine Blanc is Macabeu from the Le Pilou parcel, farmed organically and made with almost nothing done to it: wild yeasts, no corrections, next to no sulphur. Bright and textural, with dried citrus, orchard fruit and a saline, stony finish.
