Ormiale | Bordeaux, France
Fabrice Domercq & Jasper Morrison
Founded in 2007 by Fabrice and Jasper, Ormiale began as a deeply personal project rooted in curiosity, patience, and a desire to work outside convention. Based in an old limestone quarry in the heart of Saint-Émilion, the estate operates beyond appellation constraints, allowing complete freedom in both the vineyard and the cellar.
Farming is thoughtful and hands-on, while winemaking follows a low-intervention approach: native fermentations, no fining or filtration, and extended ageing that often stretches over years. Some cuvées evolve slowly on lees or under a veil of yeast, developing texture and quiet complexity over time. One might argue, Fabrice is an artist and grape juices is his medium of choice for this project.
Ormiale’s wines are unforced and expressive, offering an intimate, alternative vision of not just wines from Bordeaux but wines in itself, one shaped by trust in the land, the vintage, and time itself.
