James 2021
With an almost red wine nose, this sparkling natural wine surprises with its drinkability and tension.
This Vin de France natural sparkling wine follows the "méthode ancestrale" technique and is made with hand-picked Malbec (90%) and Cabernet Franc (10%). The grapes are pressed and only indigenous yeasts are used. It is then aged in an old limestone quarry at a consistent temperature of 10°C. The first bottling takes place in early October 2021, while still in fermentation, and is only disgorged upon order. This wine is made with only grapes and nothing else added at any point.
