Laura and Paulo farm old plots across the Roussillon on limestone, marl and shale, and Babel is one of two whites they draw from them. Fermentation runs on native yeasts, nothing is fined or filtered, and sulphur barely features. This is the younger and more nervous of the recent releases, tighter through the middle and still coiled. Citrus peel, green orchard fruit and a herbal, saline edge, with acidity that arrives early and stays. Give it a little air, or a year, depending on your patience.
