Jennifer Bariou and Thibaut Bodet planted themselves at Azay-le-Rideau in the central Loire and made their first vintage in 2015, starting on two and a half hectares and working up to nine. The vines are organic, farmed on biodynamic principles, the yeasts are native, and the pair do about as little as they can get away with. Ça Grolleau'te is Grolleau, a grape the Loire spent decades underrating, picked by hand and fermented spontaneously in neutral wood. It comes out pale and properly dry, red berry fruit with a herbal edge and a faint chalky grip, and roughly as much sulphur as would fit on a pinhead.
