Savagnin is the grape that makes the Jura difficult to explain to anyone who has not tasted it, and Les Terrasses is a clear way in. Jean-Michel and Laurence Petit have farmed organically in Pupillin since 2010, certified from 2012, across seven and a half hectares of Triassic red marne. Each parcel ferments separately on its own yeasts and sulphur is kept to a minimum, sometimes to nothing. The wine is dry and saline with green apple and bruised citrus, a bitter almond note at the edges, and acidity that holds everything upright. It rewards an hour in the glass.
