
Palli et Genesia 2018
Palli and Genesià are two of the high sites Jason Ligas and Patrick Bouju work on Samos, and this cuvée takes its name from both. The fruit goes in whole and stays on its skins for around forty days before settling into 750-litre amphorae, which is what gives the wine its amber cast and quiet tannic grip. Sous le Végétal is their shared project on the island: sixty small plots of Muscat blanc à petits grains between 400 and 910 metres on volcanic soil, farmed biodynamically and nursed with herbs rather than chemistry. Bottled unfiltered, unsulphured and sealed under black wax. Dry, perfumed and textural, with citrus peel, herb and a long saline line drawn straight from the rock. A Muscat that argues, convincingly, for the dry side of Samos.
