Dennis Wolf came back to the family winery at Grosskarlbach in 2018 and turned it biodynamic almost immediately, earning Demeter certification by 2021. He works fourteen hectares across Grosskarlbach and Laumersheim, and the Kirschgarten is the site that matters most: a thin skin of loess and clay over massive limestone, more than half of it active lime, which is exactly what gives this Riesling its spine. The winemaking is deliberately spare. Eight hours of cold maceration, a spontaneous fermentation in used 350 and 600 litre barrels, then twenty-five months resting on full lees before bottling with no fining and no filtration. Purist and mineral, reduced to essentials: citrus, wet stone and a long chalky finish.

Pour it when you want to taste the rock more than the fruit.
Steamed fish with ginger, or chilli crab.
Oysters, smoked trout, or a plate of charcuterie.

In 2018 Dennis Wolf returned home to his family winery in Grosskarlbach, with a total of 14 hectares of vineyards in the villages Grosskarlbach and Laumersheim. This vineyard has been working biodynamically since 2018 and is Demeter certified for 2021.
The Pfalz is the second warmest wine region in Germany, here Wolf grows many different grape varieties. Mainy Riesling, Pinot Blanc/Gris, Chardonnay and Sauvignon Blanc for the white wines and Pinot Noir for red.
Each parcel has been vinified separately with late harvests, long pressing time, indigenous yeast and 18 to 24 months of ageing for every wine. After two winters in a tank or barrel, there's no need for filtration.
