Andi Mann's Spätburgunder draws on both of Eckelsheim's defining soils, the limestone he calls Calx and the porphyry he calls Purpur, one lending weight, the other a cool, mineral lift. Organically farmed and hand-picked, it ages in used barrels and goes to bottle unfiltered and without added sulphur, which keeps it light on its feet and honest. Bright red cherry and rhubarb, a stony, herbal undertow, fine tannins and a fresh acid line that keeps everything moving. This is German Pinot in its cooler, more transparent register; serve it slightly chilled.
