Coline 2021

Coline is Domaine de la Sarazinière’s entry-point white, but “entry-point” does a disservice to a wine made from Chardonnay vines averaging 60 years old in the clay-limestone soils of Bussières. Philippe and Guillaume Trébignaud farm their parcel organically, harvesting by hand and fermenting with native yeasts. Coline is precise and vivid: lemon zest, white flowers, and a chalky mineral thread run through the palate, underscored by the racy acidity that defines good Mâconnais Chardonnay. Unoaked, unfined, and unfiltered, it has the freshness of a wine made with zero compromise, and the depth of fruit that comes from old vines in a well-tended terroir. A beautiful aperitif or partner to shellfish and soft goat’s cheeses.
