

Chaponnieres 2020
David Lefort studied medicine and philosophy at the Sorbonne before deciding, in 2010, to make wine in Rully instead. He came from no winemaking family, which in Burgundy is close to unheard of, and taught himself the work by doing it. Five hectares now, split between Mercurey premier cru and Rully village, farmed on a biodynamic footing. Chaponnieres is white Burgundy made the way he makes everything: native yeasts, no fining, no filtration, and a little new oak for shape rather than flavour. Citrus and white peach with a nutty edge off the barrel, and the acidity to hold it all upright.
