Gisous comes from the oldest vines Sylvère Trichard farms, a parcel of eighty-year-old Gamay facing north and east above Blacé, and it is named for his grandmother, who lives next door. It is also the one wine in the range that sees any wood, six to eight months in old oak depending on the year, which gives it a breadth the other cuvées do not chase. Sylvère and his partner Mathilde Sothier farm organically and biodynamically here, and the wine is made with semi-carbonic maceration, no fining, no filtration and next to no sulphur. Dark fruit and dried herb over a fine, savoury structure, with the depth old vines give and the freshness Beaujolais never loses. A magnum worth keeping for something.

Pairing Suggestions

Something worth marking, and nobody wanting a fuss made of it.
Old vines give it grip for richer meat: roast duck rice, or beef rendang.
Or slow-cooked lamb, with an aged Comté to follow.

About Séléné

In 2012 Sylvère Trichard took over the vineyard that grandparents established in 1955 near Blacé in Beaujolais. The vines on the vineyard are between 20 and 80 years old and planted on sandy clay soils over granite. The vineyard has been converted by his uncle to operate biodynamic since 2000, and Sylvère aims to continue this vision.
The wines are fermented with native yeasts, no additives and all reds undergo carbonic maceration.
The ageing process predominantly occurs in concrete vats, except for the cherished plot of his grandmother—the oldest vines. These vines are selected for a cuvée dedicated to her and undergo ageing in traditional old barrels.
