Bianco Solera
Bianco Solera showcases the distinct characteristics of white grapes from 2020 to 2022. Some varieties, such as Muscat, Müller-Thurgau and Scheurebe, are macerated for 14 days, while others, like Gewürztraminer and Grauburgunder, are macerated for 7 days. Sylvaner and some Riesling undergo 3 days of maceration. Others such as Weißburgunder and some Riesling are pressed directly. Each variety is fermented separately in semi-carbonic before being aged in 500L oak barrels. Once the blend is created, it is aged in tanks to develop a unique personality before being bottled.
As the name Solera suggests, 50% of the quantities is always saved to create a perpetual reserve. Each year, this process is repeated with the new vintage while waiting for them to mature prior to blending.
