Auxerrois is Lorraine's white grape. It predates the appellation system, grows well on the limestone and clay around Bulligny, and in the right hands produces something genuinely worth paying attention to: a white with body, floral lift, and a creaminess that sits somewhere between a still wine and a sparkling wine made by the conventional method.
Wilfried Crochet harvests it by hand from his five organic hectares, presses it gently, and bottles it mid-fermentation. No second fermentation, no dosage, no additions. The bubbles finish in the bottle on their own, which is both the oldest method of making sparkling wine and the one that stays closest to what the fruit actually tasted like on the vine.
The result is light and alive, with apple blossom and stone fruit on the nose and a gentle, creamy texture that fills out the palate without weight. The bubbles are soft, not aggressive. It is the kind of sparkling wine you open on a Tuesday because it needs no occasion. Serve very cold, from the fridge, with oysters, grilled fish, or nothing at all.
