Gamay grown on limestone and clay in Lorraine is not what most people picture when they think of Gamay. It is not Beaujolais, with its volcanic granite and carbonic maceration tradition. It is something cooler and more northerly, closer in spirit to a light Burgundy red than a glou-glou house wine. Wilfried Crochet uses it here in the simplest possible way: whole clusters, fermented and bottled before the fermentation is finished, the CO2 from those last few grams of sugar trapped in the bottle as fine, gentle mousse. No additions. No disgorgement. No dosage.

The colour is a pale salmon pink that deepens toward copper at the rim. On the nose, fresh strawberry and raspberry with the faintest herbal lift that Lorraine Gamay tends to carry. On the palate, dry and bright, with the kind of light, refreshing texture that makes it easy to pour a second glass before you have finished thinking about the first. Chill it down. Drink it with charcuterie, grilled fish, or on a humid Singapore evening when you need something cold and alive.
