

Vin Jaune 2016
Vin Jaune is Jura's most singular wine, and the 2016 from Jean-Michel is a case for why it exists. Savagnin aged for a minimum of six years under a veil of yeast, neither topped up nor touched until it develops the deep, oxidative character that no other wine in the world quite replicates: roasted almonds, dried citrus, warm spice, and a finish that stays with you for minutes.
It comes in a 620ml clavelin bottle, the traditional format, and once opened Jean-Michel says it will keep for six months. We believe him, but suspect most people won't need to test that.
