Vin jaune is the Jura's great act of patience. Savagnin goes into barrel and is left there without topping up for six years and three months, while a veil of yeast forms across the surface and slowly rebuilds the wine underneath it. What comes out is bottled in a clavelin, the squat 620ml bottle that holds what remains of a litre after all those years of evaporation. Jean-Michel and Laurence Petit have farmed organically at Arbois-Pupillin since 2010, certified from 2012. Theirs delivers everything the style promises: curry spice, roasted walnut, dried apple and a saline, almost briny depth, with a finish that carries on well past the point most wines have given up. Open it hours ahead. It will not tire.
