

Les Nuits Fresches 2022
Les Nuits Fresche is their 100% Pinot Noir from two parcels on the estate, Le Clos du Grand Bézillé and Les Mommelières, vinified deliberately differently. The Mommelières fruit went through a week-long carbonic maceration — the technique that gives Pinot its most perfumed, crunchy expression. The Bézillé fruit was partially destemmed and fermented in open-top vats for three weeks — more structure, more grip. Assembled a month after pressing, aged in tank until bottling in June. No oak at any point.
What comes out of this is a Pinot that doesn't behave like you'd expect Pinot from the Loire to behave — which is entirely the point. Deeply mineral, with tension, energy and vivacity alongside bright berry fruit and good lift. The black schist does what schist always does: it pulls the wine toward precision and length rather than weight. Serve it cool — this is wine for the table, not for contemplation.
Pairs well with roast chicken, mushroom dishes, charcuterie, grilled salmon.
