Wilde Heimat means wild homeland, and the name is not decoration. Michael Völker and Melanie Drese farm at Kitzingen in Franconia with the vineyard treated as habitat first: bat boxes among the rows, guano returned to the soil, and a share of every bottle going to the Landesbund für Vogelschutz. This is a white made in that spirit, fermented on its skins and bottled without filtration or added sulphur. Apple skin, dried herbs and a chalky, gently tannic pull, with an oxidative note at the edges that keeps it interesting rather than tidy.
