Outside the Temple is Chengzi's red blend from the Great Wall foothills of Huailai, Hebei, and a snapshot of how far northern China has come. Merlot leads at 45 percent, with a quarter of the indigenous Longyan grape and a good measure of Marselan, the Franco-Chinese crossing that has found a real home in Hebei. He farms biodynamically and makes wine the hands-off way he has since 2013: organic fruit, wild yeasts, no additions, no fining or filtering, no sulphur. Five months in old oak keeps it fresh and unforced. Bright red and dark berry fruit, a savoury, herbal edge and soft tannins, a dry red that drinks easily and honestly. Serve it with a light chill.
